It’s a budget-friendly twist on traditional lasagna that’s perfect for feeding a crowd.

Ingredients

  • 4-8 Flour tortillas

  • 2 cups shredded cheese (cheddar or mozzarella)

  • 1 can of black beans, drained and rinsed

  • 1 can of corn, drained

  • 1 cup of diced bell peppers

  • 1 cup of salsa or canned tomato sauce

  • 1 cup of sour cream or Greek yogurt

Directions

  • Start by spreading a thin layer of salsa or tomato sauce on the bottom of a baking dish.
  • Place a tortilla on top, then layer with cheese, black beans, corn, bell peppers, and a dollop of sour cream.
  • Repeat the layers until all ingredients are used up, finishing with a layer of cheese on top.
  • Bake at 375°F for about 20-25 minutes, or until the cheese is bubbly and golden
