Lentil and Vegetable Soup

Ingredients
1/4 onion, chopped
1 clove garlic, crushed
1 carrot, diced
1 celery stalk, diced
1 can tomatoes, undrained
1 1/2 cup vegetable broth
1/2 cup lentils
Salt & Pepper to taste
Directions
Saute the onion in one tablespoon of oil until translucent. Add the garlic, carrot, and celery and cook for another minute.
Add the can of tomatoes and vegetable broth.
Add in the lentils
Simmer on low until lentils are soft , about 30 minutes.
