Ingredients
2 medium Russet potatoes, peeled and grated
1/2 cup cooked bacon, crumbled
1/4 cup all-purpose flour
1 egg
1/4 cup milk
1/4 cup grated cheddar cheese
1/2 teaspoon baking powder
Salt and pepper, to taste
Directions
- Preheat the waffle iron
- Grate the potatoes using a box grater or food processor. Place grated potatoes in a strainer to drain some of their liquid, and/ or place on a clean paper towel to absorb the liquid.
- Make the batter by combining all of the ingredients in a large bowl. Stir to combine to make a thick batter.
- Cook the waffles on the waffle iron until golden and crispy.
- Top with extra bacon, cheese, green onions.
