Ground beef, tortillas, and melted cheese come together in this comforting dish, perfect for busy weeknights or family meals. Easy to make and packed with flavor, these enchiladas are sure to be a hit!
Ingredients
1 lb ground beef
1/2 onion, diced
3 teaspoons taco seasoning or 1 seasoning packet
1 14 oz enchilada sauce, premade
3-12 flour tortillas (Large size - 3, small size - 12)
2 cups shredded Mexican cheese
Directions
- Brown beef and onions in a fry pan. Remove any excess fat from the pan.
- Add taco seasoning to the meat and stir to combine. If the mixture is too dry you can add 1-2 Tablespoons of water.
- In a 9x9 pan, add 1 tablespoon of enchilada sauce and spread to completely cover the bottom.
- Start layering with tortillas, meat mixture, sauce and cheese. Repeat layers until all items are used up. The final layer should be tortillas, sauce and cheese (no meat on top).
- Bake at 375F for 20-25 minutes until it is bubbly and the cheese has melted.
