Cheese Meatloaf

1 lb ground beef or beef/ pork mix
2 cups shredded cheese
1/2 cup breadcrumbs
1 egg
1 small onion, minced
2 Tablespoons ketchup
1 Tablespoon mustard
Salt and pepper
Directions
- Mix the Meatloaf: In a large mixing bowl, combine the ground beef, shredded cheese, breadcrumbs, egg, diced onion, ketchup, mustard, salt, and pepper. Mix until just combined, being careful not to overwork the meat, as this can make the meatloaf tough.
- Shape and layer: Transfer 1/2 of the meatloaf mixture to a loaf pan, pressing it down gently. Now add 1 cup of the shredded cheese, followed by the remaining meatloaf mixture and another layer of cheese.
- Cover with foil and bake in a preheated oven at 350°F for about 45-60 minutes, or until the meatloaf is cooked through and the cheese is melted and bubbly. Remove the foil for the last few minutes to brown the cheese if you like.
- Serve: Let the meatloaf rest for a few minutes before slicing. Serve it with a side of mashed potatoes or your favorite comfort food sides for a truly indulgent meal.
