Cottage Cheese Meatloaf

1 cup cooked rice
1 lb hamburger
1 cup cottage cheese
1/4 minced celery
1/2 cup minced onion
1/4 cup minced bell pepper
2 eggs
1 cup milk
1/4 tsp salt
1 tsp mustard
1 Tablespoon melted butter
1 cup bread crumbs
Directions
- Mix the Meatloaf: In a large mixing bowl, combine all of the ingredients. The cottage cheese adds moisture and helps to keep the meatloaf tender as it bakes.
- Shape and Bake: Transfer the meatloaf mixture to a loaf pan lined with parchment paper that has been sprayed with cooking spray, pressing it down evenly. Set pan in a larger pan with 1 inch of boiling water (this will help keep from the meatloaf from drying out).
