This Green Chicken Enchilada recipe is a quick and delicious dinner made with shredded rotisserie chicken, green enchilada sauce, and plenty of melty cheese. Perfect for busy weeknights, this dish comes together in under 30 minutes and is packed with zesty flavors that everyone will love!
Ingredients
2 cups chicken, chopped
8oz cream cheese
2 cups cheese, shredded
4 oz roasted chilis
1 can green enchilada sauce
8 taco size flour tortillas
Directions
Fill the tortillas with chicken, 1/8th of the cream cheese, a spoon of chilis and a sprinkle of cheese.
Roll the tortilla up and place in your 9x9 baking dish with the seam side down.
Repeat process until all tortillas are used up, reserving 1 cup of the cheese
Pour enchiladas sauce on top of the tortillas, making sure you use a spoon to force some of the sauce between the tortillas.
Top with the remaining cheese
Bake at 425F for 30 minutes until warmed and the cheese is melted.
