Made with low-carb ingredients, it’s a delicious and satisfying alternative to the traditional macaroni and cheese. Whip it up quickly using simple, keto-friendly pantry staples for a comforting, guilt-free meal. Perfect for your low-carb lifestyle while still satisfying your cheese cravings!

Ingredients

  • 1 1/2 cups sour cream

  • 2 Eggs

  • 1/4 teaspoon smoked paprika

  • 1 teaspoon seasoning salt

  • 2 Tablespoons finely minced sweet onion

  • 1/4 teaspoon white pepper

  • 1 1/2 cups cheddar cheese, shredded

  • 6 cups cauliflower cut into bite sized pieces, raw or frozen will work

  • 1 package mini smoked sausages, or hotdogs cut up

  • Parsley

Directions

  • In a medium combine all ingredients except cauliflower and smokies. Set aside.
  • In a greased 9 x 12 casserole dish place cauliflower and smokies (cut in half). Pour cheese sauce over the entire top.
  • Sprinkle parsley over the top. This set adds a little color to the dish.
  • Bake at 350 F for 60-75 minutes until the cauliflower is quite soft. Allow to set for some of the extra liquid to evaporate before serving.
