This version is all about bold flavors, featuring ingredients like salsa, cumin, and chili powder, with a generous amount of cheese mixed in for good measure. It’s a fun and flavorful twist on traditional meatloaf, perfect for taco night or any time you’re craving something with a bit of a kick.
Mexican Meatloaf

Ingredients
1 lb hamburger
2 eggs
1 cup bread crumbs
1 jar salsa
1/2 tsp each salt and pepper
Directions
Preheat the Oven: Preheat your oven to 350°F (175°C).
Mix Ingredients: In a large mixing bowl, combine the ground beef, half of the jar of salsa, eggs, bread crumbs, salt, and pepper. Mix until all ingredients are well incorporated, but be careful not to overmix.
Shape the Loaf: Transfer the mixture to a baking dish or a lined loaf pan. Shape it into a loaf, smoothing the top for even cooking.
Top with Salsa: Spread the remaining salsa over the top of the meatloaf for added flavor and moisture.
Bake: Bake in the preheated oven for about 50-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
Rest and Serve: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. Serve with additional salsa on the side if desired.
