Mexican Rice and Beans Dinner
Recipe by AmyCourse: MainCuisine: MexicanDifficulty: EasyA quick and flavorful Mexican Beans and Rice Skillet, made with fragrant rice, seasoned beans, and a perfect blend of spices. This easy one-pan dinner is budget-friendly, hearty, and packed with delicious Mexican flavors—perfect for busy weeknights!
Ingredients
1 cup uncooked rice
2 Tablespoons olive oil
1/2 small onion, diced
1 Bell pepper, diced
1 clove garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
1 can Rotel tomatoes and peppers, with juice
1 cup black beans (1 can drained)
Directions
- Prepare rice as directed. Add 1 cup rice to 2 cups water and simmer until rice is tender.
- In a large skilled heat oil, add in onions and peppers to saute until tender.
- Add all spices, Rotel tomatoes, rice and black beans
- Heat throughly and serve with cheese or other desired toppings.
