1 cup canned pumpkin puree
2 tablespoons olive oil or butter
1 small onion, finely diced
2 cloves garlic, minced
1 cup vegetable broth
1/2 cup heavy cream, or half and half
1/4 teaspoon ground nutmeg
1/2 teaspoon dried sage
Salt and pepper, to taste
1/4 cup grated Parmesan cheese
Cooked pasta of your choice
Directions
- in a large skillet, heat butter or olive oil over medium heat. Add the chopped onion and garlic and saute until translucent, about 5 minutes. Until fragrant.
