Ingredients

  • 1 pound carrots, peeled and cut

  • 2 Tablespoons olive oil

  • 3 Tablespoons Maple syrup

  • Salt & pepper

  • 2 Tablespoons butter, melted

  • 1/2 cup pecans, chopped

  • 1/4 cup panko breadcrumbs (optional)

Directions

  • Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare the carrots: In a large bowl, toss the carrots with olive oil, maple syrup, salt, and pepper until well-coated.
  • Roast the carrots: Spread the carrots out in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
