Beef Taco Bake is a hearty, crowd-pleasing dish that layers seasoned ground beef, gooey cheese, and crispy tortilla chips, all baked to perfection. This quick and easy casserole is perfect for busy weeknights and brings all the bold flavors of tacos in a simple, comforting bake.

Ingredients

  • 1 lb hamburger

  • 1 can rotel tomatoes

  • 1 can refried beans

  • 2 cups cheese, shredded

  • Crushed tortilla chips, about 20 chips

  • 2 Tablespoons taco seasoning or 1 packet

Directions

  • In a skilled brown hamburger meat; add 1/2 can rotel tomatoes and taco seasoning. Set aside.
  • In a 9x9 casserole dish dump refried beans and the remaining rotel tomatoes. Stir to combine. Smear bean mixture across the bottom of the dish to create your first layer.
  • Create the next layer by dumping all of the meat mixture over the bean layer.
  • Create a cheese layer with 1 3/4 cup cheese (reserving remaining 1/4 cup)
  • Layer crushed tortilla chips over cheese.
  • Finally, sprinkle remaining cheese over the top of the chips.
  • Bake at 400F for 25 minutes.
